Broccoli + Cheese Soup
INGREDIENTS
▢ 2kg broccoli, chopped
▢ 2kg onion, sliced
▢ 80g garlic, chopped
▢ 400g celery, sliced
▢ 454g butter
▢ 2 bay leaf
▢ 200g spinach
▢ 700g gouda, grated
▢ 5kg water
▢ 1kg milk
▢ 100g lemon juice
▢ TT salt
Directions
In a seperate pot, bring water & milk below a simmer, reserve for 4th step
Sweat onion, celery, garlic in butter on low heat until translucent
Add flour, mix well with wooden spoon or spatula
Slowly add hot milk liquid to vegetable/flour mixture. This will gradually thicken
Add bay leaf, broccoli and gently simmer until broccoli is soft
Add spinach and gouda
When gouda is melted, blend with remaining ingredients until smooth
