Broccoli + Cheese Soup

INGREDIENTS

2kg broccoli, chopped

2kg onion, sliced

80g garlic, chopped

400g celery, sliced

454g butter

2 bay leaf

200g spinach

700g gouda, grated

5kg water

1kg milk

100g lemon juice

TT salt 

Directions

  1. In a seperate pot, bring water & milk below a simmer, reserve for 4th step

  2. Sweat onion, celery, garlic in butter on low heat until translucent 

  3. Add flour, mix well with wooden spoon or spatula 

  4. Slowly add hot milk liquid to vegetable/flour mixture. This will gradually thicken 

  5. Add bay leaf, broccoli and gently simmer until broccoli is soft

  6. Add spinach and gouda

  7. When gouda is melted, blend with remaining ingredients until smooth
