Grilled Radicchio

with bacon jam

INGREDIENTS

1lb chopped bacon

2 shallots, minced

1/4 cup of brown sugar

1 tbsp minced garlic

1/4 cup apple cider vinegar

1/2 cup whiskey

1/4 cup maple syrup

2 heads of radicchio, quarter

salt

pepper

parsley

Directions

  1. Heat a pan on low heat 

  2. Render the bacon, remove the liquid fat

  3. Saute minced shallots and garlic 

  4. Deglaze with whiskey 

  5. Add remaining ingredients 

  6. Reduce until thick and "jammy"

  7. Heat grill to low/med heat

  8. Oil, season & grill all sides of quartered raddichio 

  9. Serve with bacon jam & chopped parsley on top
