Einkorn + Fennel Salad
INGREDIENTS
▢ 1 head of radicchio chopped
▢ 1 bag mixed greens
▢ 1 apple, sliced thin
▢ 1 fennel bulb, sliced thin, save the fronds
▢ 250ml Smits feta, crumbled
▢ Local Harvest pickled onions
▢ 2 cups of cooked einkorn
▢ pinch of salt
▢ 2 yolks
▢ 15ml apple cider vinegar
▢ 8ml white vinegar
▢ 30ml lemon juice
▢ 30ml honey
▢ .25 clove of garlic
▢ pinch black pepper
▢ pinch celery seed or dill seed
▢ 150ml buttermilk
▢ 50ml sourcream
▢ 250ml olive oil
▢ 100ml minced tarragon
▢ 50ml minced parsley
▢ salt to taste
Directions
1.Using a Blender on the lowest setting mix: Egg Yolks, vinegars, lemon juice, honey, garlic, spices
2.Slowly pour in oil
3.Add in Buttermilk
4.Blend in Minced Herbs
5.Season with a dash of salt
