Spiced Carrot Loaf

with walnuts and fresh carrots

INGREDIENTS

2 cups flour

1 cup sugar

1 1/2 tsp baking soda

3 tsp cinnamon

1 tsp pumpkin pie spice

1 tsp salt

2 1/2 cups carrots

3/4 cup oil

3 eggs

1/4 cup milk

1 tsp vanilla

3/4 cup walnuts

Directions

  1. Preheat oven to 350F and grease a loaf pan.

  2. Whisk together dry ingredients except walnuts.

  3. Shred carrots and add to a large bowl. Combine remaining wet ingredients.

  4. Add dry ingredients to wet ingredients and mix until just combined. Fold in walnuts. Do not overmix.

  5. Transfer batter to greased loaf pan.

  6. Bake for 55-65 minutes or until toothpick comes out clean.
