Bok Choy Salad

With thai curry dressing

Ingredients

1 head bok choy

1 large winter radish

1/3 cup sunflower seeds

1/3 cup red skin peanuts

DRESSING INGREDIENTS:

3/4 cup coconut milk

1/4 cup peanut butter

2 tBsp red thai curry paste

1 tBsp honey

1/2 tsp vinegar

1/2 tsp lime juice

1 tsp ginger powder

1 tBsp soya sauce

1/2 tsp hot sauce

Directions

  1. Thinly slice and wash bok choy and winter radish.

  2. Combine bok choy, winter radish, peanuts and sunflower seeds in a large bowl.

  3. Whisk salad dressing ingredients in a bowl.

  4. Add desired amount of dressing and reserve extra for drizzling.

  5. Garnish with thinly sliced winter radish.

  6. Optional: add cooked chicken if desired.
