Tokyo Turnips

serves 4-6 as a side

INGREDIENTS

1 bunch, or 6 Tokyo turnips and their greens

60ml butter (divided)

30ml olive oil

1/2 of a onion, peeled, and diced small

1 medium carrot, peeled, and diced small

125ml water

15ml brown sugar, honey, or maple syrup (optional)

salt and pepper

Directions

  1. Trim greens from turnips, remove tough stems, discard stems, and chop up greens

  2. Half the turnips, wash, and dry

  3. Heat 30ml butter, add onions and carrots, sauté till soft. Add chopped turnip greens and water (and sugar if you are using)

  4. Bring to a simmer

  5. In separate pan, heat remaining butter and olive oil, sauté turnips, 2-3 minutes on each side till golden

  6. Add to greens, cover pan, and bake in 350 degree, 10-15 minutes or till turnips tender

  7. Season with salt and pepper, serve
